 | Brook Farm, Wigmore, Herefordshire Brook Farm Cider is made in North Herefordshire by Peter Keam. He runs a one-man show and makes cider and perry from traditional varieties. Normally we have both his cider and his perry. | |
 | Butford Farm, Bodenham, Herefordshire Janet and Martin Harris run an organic smallholding at Bodenham, not far from Leominster. They produce organic soft fruit, pork, eggs and also cider and perry. The cider and perry are not yet soil association registered but they have bought an orchard which is in conversion. Their speciality is Normandy-style naturally sparkling cider. The partially-fermented cider is bottled in a champagne bottle with a wired down cork. The fermentation continues in the bottle until the build-up of pressure stops it, leaving some natural sweetness in the end product. | |
 | Newton Court Cidery, near Leominster Newton Court is a farm just south of Leominster, boasting some of the oldest orchards in the county. Draught cider is available from the farm shop and also on line in bag in box format and 50cl bottles. Tom and Paul Stephens make the cider & prize-winning perry. The cider is from their traditional unsprayed orchard of standard trees. The perry is made from locally grown fruit that is bought in. There are plans to plant a perry orchard in the next few years. | |
 | Oliver's, Ocle Pychard, Herefordshire Tom Oliver is a perry specialist having honed his perry-making skills at Hindlip College. The fruit is hand-picked from unsprayed trees and the juice is fermented by natural yeasts and matured in old oak barrels. Tom has been instrumental in gaining "presidium"status for perry as an endangered product under the auspices of the International Slow Food movement. Best known for his perry, his cider is pretty good too. | |

One-time winner of the CAMRA Pomona award, he scours the countryside for the ancient trees bearing the varieties of fruit he requires. Normally we stok both cyder and perry.  | Gwatkin Cider & Perry Dennis Gwatkin makes his cider and perry in the Golden Valley, a remote corner of Herefordshire, close to the Welsh border. He believes in minimum intervention in the cider-making process and his ciders and perries are very fruity. The ciders and perries are mostly made from single varieties. | |

There is evidence that secondary in-bottle fermentation began, not in Champagne, but with ciders in the Forest of Dean in the 17th century.
