A blend of Ellis Bitter, Brown's Apple, and Dabinett, this dry cider is soft on tannins, clean apple blossom aromatics, well, balanced.

A medium still fine table cider.

This is a Herefordshire equivalent of an ice wine. Juice from a blend of Blenheim Orange and Laxton's Superb apples is put into a deep freeze. About half of the juice freezes. The cider is then fermented from the highly concentrated juice. The sugars and the acids and the flavours do not freeze. There is a richness and depth of flavour which is not to be found in any other cider. Only some of the sugar ferments, to give a cider which is rich and sweet but not in the least cloying. A wonderful drink, ideal with any apple dessert, and almost any cheese.

This is made in a similar way to the dessert cider. The juice from Conference and Doyenne du Comice pears is frozen. The juice is fermented to 12% alcohol - too strong to be called a perry or even pear cider. It is sweet but not cloying, and has great length and depth of intense but subtle flavours including floral apricot and caramel. One of the most wonderful things I have ever drunk. Limited stocks.

Traditional Method Sparkling Perry, made with mostly Blakeney Red perry pears grown in an old traditional perry orchard at Chapel Pleck in nearby Much Marcle. This perry has elegance and finesse, with subtle fruit notes and a creamy brioche mouthfeel. Brut style sparkling to accompany a celebration, or partner with light meat dishes or good soft cheeses.
